Habit of an Officer of the Janissaries and Superintendent of their Kitchen

by Thomas Jefferys

The unique copperplate engraving of Thomas Jefferys dating back to the mid-18th century is an interesting representation of the hierarchical structure of the Ottoman Empire. Although the Janissaries are widely known for being the Sultan's elite infantrymen, this engraving presents one of their highly ranked officers who was also the Superintendent of the Kitchen—an extremely crucial position in the imperial palace.

The plate presents a comprehensive illustration of the process of transforming functionality on the battlefield into ceremonies at the court. One can observe the beautiful design of the clothes worn by the officer as well as his unique headgear. In the 18th century, the kitchen of the Janissaries was a sign of unity among them and their allegiance to the Sultan. Their huge cauldrons became symbols of their fraternity.
